The real decision with sanitizer test strips is not which brand looks the most professional on the shelf. It is whether the strip you buy actually matches the sanitizer chemical you use (chlorine or quat) and whether it is ranged for restaurant-strength concentration rather than for pool or drinking water. Get either of those wrong and the strip can read fine while telling you nothing true about your sink, and a missing or mismatched strip is still a routinely cited item on 2026 health inspections. Match the strip to the sanitizer, not just the word “sanitizer”
Chlorine strips and quat strips are not interchangeable. A chlorine strip will not give a trustworthy reading on a quaternary ammonium (quat) solution, and a quat strip will not give a trustworthy reading on a chlorine solution.
Within “quat” strips specifically, there are at least two chemically distinct sub-families, and this is the single most-missed step in the whole category. Two-chain quats (tested by strips like Hydrion’s QT-10, which reads compounds such as Hyamine 3500 and Roccal-type quaternaries) and four-chain quats (tested by strips like Hydrion’s QT-40, aimed at newer fourth-generation quat chemistries) will not reliably read each other’s sanitizer solution. A strip that “does not seem to be working” is very often the wrong quat-chain strip for the sanitizer actually in the bucket, not a defective strip. Nobody has published a complete table mapping every commercial quat sanitizer brand to a chain type. So check your own sanitizer product’s label or safety data sheet for the active ingredient’s chain length, or just call the manufacturer, then buy the matching strip family. A generic QAC strip exists as a lower-precision compromise when the exact quat family is unknown; treat it as a reasonable fallback, not an automatically better choice.
The FDA Food Code ppm ranges, cited exactly
The FDA Food Code sets the concentration, temperature, pH, and contact-time requirements for sanitizing solutions used on food-contact surfaces (Section 4-501.114), and requires the chemical concentration to be either the figure the Code specifies or, where the Code does not fix one, the concentration on the manufacturer’s own label (Section 7-204.11).
For chlorine, the Food Code’s own table is specific about temperature and pH, not just one ppm figure:

Most foodservice operations run in the 50-99 ppm band at the matching water temperature. Note the deliberate 50-99 (not 50-100) range in the Code’s own table; some buying guides round this to “50-100 ppm,” and that rounding is common but not exactly what the Code specifies, since 100 ppm is its own row with a lower minimum temperature requirement, not simply the top of the 50-99 band.
Quats work differently by design. The Food Code does not hand you one fixed ppm number for quats the way it does for chlorine; instead it requires you to follow the sanitizer’s own EPA-registered label. A real manufacturer label for an EPA-registered quat product (MG 4-Quat) shows a dilution of 1.0 ounce of product per 4 gallons of water yielding a 200 ppm active quat solution, which is a real example of the “around 200 ppm” figure that gets repeated across the category. That figure is a common label value for 2-chain quat products specifically; 4-chain quat products commonly carry a broader label range, often 150 to 400 ppm. Put plainly: chlorine has a Food Code table you can quote directly. Quats don’t have one universal number, and “200 ppm” is a manufacturer-label convention, not an FDA mandate.
How to read each strip correctly
The read protocol is different for each chemistry, and blending the two timings is a common source of bad readings.
Chlorine: dip the strip and pull it back out quickly, then read the color while it’s still wet. Don’t confuse this with the contact time the sanitizer itself needs on a surface, at least 7 seconds per the ServSafe reference chart. The strip’s dip-and-read moment and the surface’s sanitizing contact time are two different clocks, and mixing them up is an easy mistake to make.
Quats: immerse the strip for 10 seconds and read the color while it’s still wet. Some newer quat strips claim a shorter 1-second dip with a 5 to 10-second wait instead, so follow that specific product’s printed instructions rather than assuming the classic 10-second protocol covers every brand. For the most accurate color development, test at 65 to 75°F. Your sink’s actual working temperature may not match that, and a reading taken well outside the window deserves more caution before you trust it.
Quat solutions foam and bubble when agitated. Dip the strip in a clear part of the sink or bucket rather than through the foam, or just wait for the bubbles to settle. Worth knowing here too: if a cleaning cloth sits soaking in a quat bucket, the quat molecules can bind to the fabric (cotton more than microfiber), quietly draining the solution’s actual concentration even though the bucket still looks full. Test at the time of use rather than trusting an earlier reading.
Strips are printed with a lot number and an expiration date. Check the printed date before you rely on a strip for a reading that matters at an inspection. No single source gives one universal shelf-life figure across brands, so go by what’s printed on your own vial instead of assuming a fixed number of months.
The wrong-range trap
Some Amazon listings titled “chlorine test strips” are actually drinking-water or pool-testing products ranged for 0 to 6 ppm or 0 to 10 ppm, not for restaurant-strength sanitizer solution. Those products will max out and read off the chart on an actual 50 to 200 ppm sanitizer bucket. This trap can even show up within the same brand: LaMotte, a real independent water-testing lab brand, sells both its 4250-BJ chlorine sanitizer strip (10 to 200 ppm, the right product for a three-compartment sink) and a separate Free & Total Chlorine strip (0 to 10 ppm) built for drinking-water testing, under the same LaMotte name. When you search, confirm the listing states a sanitizer-strength range like 10-200 ppm, not just the brand name.
Combo kits, single-purpose strips, and the newer 2-in-1 format
If your cafe uses only one sanitizer chemistry, a single-purpose strip (chlorine-only or quat-only, matched to the correct chain type) is the simplest, most established choice. Running both is common too, quat sanitizer wiping down tables and equipment while chlorine runs the three-compartment sink, and in that case a combo kit with two separate vials covers both without buying two full products. The tradeoff with any combo kit is that staff have to grab the correct vial for what they’re actually testing. Mislabeling or a rushed grab defeats the purpose just as surely as not testing at all.
The sanitize step is also where the strip and the fixture meet: the third compartment is the bay an inspector can ask you to demonstrate a reading at, immersed for the contact time on your sanitizer’s label. A newer format collapses both chemistries onto a single physical strip instead of two vials. That’s a real convenience if it reads reliably, since staff never have to figure out which vial matches which sanitizer. But it’s also a newer product with a shorter track record and a trickier single-strip color reaction to interpret than a single-purpose strip. Treat it as promising rather than proven, and confirm it reads clearly under your own lighting before you lean on it for an actual inspection.
Who this is for, and who can skip the combo
If you run one sanitizer chemistry across your whole operation, chlorine in the sink and nowhere else, or quat everywhere and no chlorine sink, a matched single-purpose strip is enough. Skip the combo kits and the 2-in-1; they solve a two-chemistry problem you don’t have. If you run both chemistries at different stations, or you’re not fully sure which chemistry your current sanitizer uses, a combo kit (or the newer 2-in-1, once you’ve verified it reads clearly for your team) beats stocking two entirely separate single-purpose products and hoping staff never mix them up.
One thing worth flagging: Precision Laboratories is a real, established test-strip manufacturer that publishes its own detailed buying-guide content and sells both chlorine and quat strips, including specialty high-range QAC strips for non-foodservice industrial use. Its direct-sale site is a legitimate option, but its Amazon listings showed mixed availability during this research pass, with at least one strip listing showing as unavailable while others were active. Do I need a quat test strip or a chlorine test strip?
Match the strip to the sanitizer chemical you actually use. Quat strips will not accurately read a chlorine solution, and chlorine strips will not accurately read a quat solution. If your cafe uses quat sanitizer on tables and equipment but chlorine in the three-compartment sink, which is common, you need strips for both, or a combo kit or a 2-in-1 strip.
What ppm should my sanitizer test strip read?
