Common questions

Does my coffee stand actually need a dedicated handwash sink, or can I just use hand sanitizer and gloves?

Yes, in every jurisdiction we checked. California, Oregon, LA County's enforcement guide, and New York City all treat a dedicated handwashing sink with running water as a baseline requirement for a mobile unit that prepares or serves food, and none of them treat sanitizer or gloves as a substitute. The one real carve-out: LA County's guide lets a Compact Mobile Food Operation that never handles raw meat, poultry, or fish skip *warm* water at the sink. That is a narrow exception about water temperature, not about needing a sink at all. Confirm your own classification with your health department before assuming it applies to you.

What size fresh water and wastewater tank do I actually need?

This is where jurisdictions disagree the most. Oregon sets a flat 5-gallon minimum for handwashing. California's own LA County guide sets the floor lower for a handwash-only unit, a half-gallon water heater capacity, but California's statewide statute (HSC Section 114240) requires the wastewater tank to hold 50 percent more than the fresh tank, plus another 15 percent if any of that water goes toward food or beverage prep. That is a different, larger number than the '15 percent larger' line repeated across several retailer product pages. Go with your own state's statute, not a retailer's rule of thumb.

Does the water actually have to be hot, or just not cold?

It has to hit a specific range in most places, and the range moves more than buyers expect. California enforces 100 to 108 degrees Fahrenheit at the tap, and going over the top of that range fails an inspection just like going under it does. Oregon sets a flat 100-degree floor. The newest federal model code (FDA 2022) lowered its own reference number to 85 degrees, but that's a model code, not automatically your local law, and plenty of states haven't adopted it yet. Can I just use a 5-gallon jug and a cheap pump instead of buying an integrated unit?

You can buy exactly that, and it is a real product, but the base version is cold water only. On its own it will not meet any hot-water requirement in this guide.
