Chop Stop Franchise Cost: Applications Are Paused

Chop Stop says on its own site that it has temporarily paused franchise applications. It publishes no fee, investment range or royalty anywhere.

The most useful thing about Chop Stop is a sentence on its own franchising page, and it settles the question before cost enters into it.

“The demand for franchises is so high, however, we’ve had to temporarily pause applications. Fill out the form below to get on the wait list and be the first to know when that changes.”

What it publishes, and what it does not

Chop Stop’s site is informative about several things: its history, its 2024 ownership transition, and exactly where its restaurants are. We checked every page on the domain through its own sitemap. There is one franchise-related page and no disclosure document.

On money, it publishes nothing. No franchise fee. No investment range. No royalty rate or basis. No advertising fee. No liquid-capital or net-worth requirement. No term or renewal detail. No franchised-versus-company-owned split.

That is a real finding rather than a gap in our research, and it is not improper. Culver’s does the same thing, publishing a liquidity figure and nothing else. The difference here is that Chop Stop is also not currently accepting applications, so there is no funnel in which those numbers would be released.

The directory listings disagreed, and the franchisor settled it

This site has now hit the same question three times, and the answer has come out differently each time, which is itself the lesson.

For Robeks and Philly Pretzel Factory, directories showed “not accepting applicants” while both franchisors were visibly recruiting: live lead forms, named development staff, new stores announced. The directory status was about the directory.

Here it went the other way. One directory said Chop Stop was not accepting inquiries. Another said it was. The franchisor’s own page confirms applications are paused, which makes the first substantially right and the second wrong.

So the rule is not that directories under-report availability. It is that directory status is unreliable in both directions, and only the franchisor’s own site settles it. Availability is the single most misreported field in this category, and it is the cheapest one to check yourself.

The unit history is on its own page

Chop Stop’s history page tells the arc plainly: founded in 2009, five company-owned locations in Southern California within four years, then franchise expansion to 28 locations over the following five years. Then, in its own words, the pandemic “hit hard, halving Chop Stop’s footprint,” followed by restructuring and what it describes as measured growth.

Its live locator shows 10 locations today, six in California and four in Nevada.

Read against that history, ten is the current state of a brand that reached 28 and contracted. That is not a criticism, and plenty of chains rebuilt from worse. It does mean the useful questions are about the rebuild rather than about the fee: what changed operationally after restructuring, and what the unit economics look like now.

Ownership is stable and recently transitioned. Its history page states founder Mark Kulkis retired in 2024, with co-founder Joey Gonzalez becoming President and Owner. We found no parent company, private-equity holder or restaurant group, and no bankruptcy or acquisition.

What to do if you want one

Join the wait list if you are genuinely interested, and understand what it is: a form asking for name, phone, email and state. It collects contact details so the company can reach you when applications reopen. It is not an application, and nothing about it establishes that you would qualify.

Its state dropdown lists Arizona, California, Colorado, Nevada, Oregon and Utah. Since it operates only in California and Nevada, the other four read as markets it would like to enter rather than places you could join today.

Then use the pause productively. Visit the locations, talk to franchisees, and have your questions ready for when the FDD becomes available, because that document is the only place the figures above will ever be answered.

How it compares in its category

While Chop Stop is paused, the other salad and bowl brands are not all equally open either: our category side-by-side sorts them by whether a single-unit buyer can apply today. Playa Bowls and Robeks are the two with the clearest published route in.

Questions to ask when applications reopen

  • What is the initial franchise fee, and the Item 7 total investment range by format?
  • What are the royalty and advertising percentages, and are they charged on gross or net sales?
  • What are the liquid-capital and net-worth requirements?
  • What does Item 20 show for openings, closures, terminations and transfers over the last three years?
  • What changed operationally in the restructuring, and what has been different since?
  • Of the current ten locations, how many are franchised and how many company-owned?
  • What is the initial term, and what does renewal cost?
  • Will a franchise attorney and an accountant review the full FDD with me before I commit?

Why do directory sites list different Chop Stop figures?

Because none of them can be checked against the franchisor, which publishes nothing financial. Across the sources we reviewed, the franchise fee appeared as both $30,000 and $35,000, liquid capital as both $150,000 and $175,000, and the advertising fee as both 0.5 percent and 2.5 percent. A fivefold disagreement on one fee is a sign the underlying data is not reliable.

Its wait-list form offers a state dropdown listing Arizona, California, Colorado, Nevada, Oregon and Utah. It currently operates only in California and Nevada, so the other four read as target markets rather than places you could join today.
