Two allowances change the total. Both guidelines apply an 80 percent allowance to a facility using only single-service, disposable utensils and cups. Once reusable multiservice ware enters the picture, you compute 100 percent of demand with no discount.
The formula, run twice
Both guidelines publish the same electric formula in near-identical form:
kW input = (GPH x degrees of rise x 8.33 lb per gallon) / (thermal efficiency x 3412 BTU per kW)
Rise is your target outlet temperature minus your incoming cold water temperature. Both documents assume 98 percent thermal efficiency for an electric tank unless a specific model’s lab listing says otherwise. The 50-degree rise used below is illustrative, roughly 60-degree incoming groundwater heated to a 110-degree target. Your real rise depends on your incoming water temperature and your locally required outlet temperature, so treat the rise figure as a placeholder for your own number, not a value to copy.
Example A, a counter-service cafe with one hand sink and disposable cups only. Demand is 5 GPH. Apply the single-service allowance, 5 x 0.80, and you need 4 GPH of recovery. Run it: (4 x 50 x 8.33) / (0.98 x 3412) = 1,666 / 3,344, which is about 0.5 kW.
That is a very small load. The smallest mini-tank in this guide already runs a 1440 W element, so it clears the requirement with room left. Which is exactly why the Albuquerque guideline opens by saying recovery rate is more important than actual capacity. Once you are above the demand number, what you are really buying is how quickly the unit refills after a burst of consecutive handwashes.

Now compare that against real hardware. Every point-of-use tankless unit in this guide sits between 0.3 and 0.5 GPM. That lands at or just under the 0.5 GPM the table sets for a hand lavatory, and at roughly a quarter of what the same table asks for at a warewashing sink. This is not a defect in those products, they are not sold for that job, but it does mean a small tankless unit cannot honestly be the sole hot water source for a three-compartment sink.
