A coffee shop buys a scaled-down version of its equipment list and calls it a cart. That’s backwards, and it’s the single most common way new cart owners end up with a machine that trips the breaker every rush or a fridge with nowhere to plug in. A cart’s footprint might run to a folding table and a couple of shelves, maybe 40 square feet if you’re lucky with the spot, and inside that space, two things decide almost everything else you can put on the counter: power and water.

This list starts with those two constraints instead of ending with them, then works through the compact gear that actually fits a cart’s counter, budgeted against published cost guides and county health requirements. The power problem comes first

A shop wires in a dedicated 208 to 240 volt line for its espresso machine and stops thinking about it. A cart usually can’t. You’re plugging into whatever a farmers market, an office lobby, or an event organizer actually offers, and that’s almost always a standard 110 to 120 volt household-type circuit rated for 15 or 20 amps, not a commercial line, per The Coffee Brewers’ electrician-education page on espresso machine wiring. That narrows your machine choices before you look at a single spec sheet.

110V machine choices and what a household circuit allows

Single-group machines built for exactly this situation exist, and their draw lands close to the ceiling of a household circuit. The Nuova Simonelli Oscar II lists at 110 volts and 1,200 watts on its Amazon listing, though Seattle Coffee Gear’s product page for the same machine lists 120 volts, 15 amps, and 1,300 watts, a small mismatch worth flagging since spec sheets don’t always agree down to the watt. The Rocket Appartamento TCA runs 110 volts at 1,350 watts per its EspressoSale listing. Either fits inside a standard 15-amp, 1,800-watt circuit on its own, with some headroom, but that margin disappears fast once a grinder and a fridge compressor share the line.

The Coffee Brewers’ guidance is blunt: if a machine’s nameplate shows it pulling close to 18 or 19 amps, don’t try to make a 20-amp circuit work. Step up to 30 amps instead, because a marginal circuit trips during your busiest hour, not your slowest one.

Generators and batteries: the wattage math

Cart-King’s October 2025 equipment guide estimates total cart wattage, machine plus grinder plus a small fridge, at 2,200 to 4,000 watts, and prices generators at $800 to $2,500 and battery power stations at $1,200 to $3,000. Run the numbers on one real setup: an Oscar II at roughly 1,300 watts plus a Baratza Encore grinder, which Baratza’s own electrical spec sheet lists at 120 volts and 120 watts, comes to about 1,420 watts continuous before a fridge compressor’s startup surge. Honda’s own product page for its EU2200i inverter generator lists 1,800 watts of rated continuous output and 2,200 watts peak, which covers that load with only a few hundred watts to spare, tight enough that you shouldn’t run the fridge compressor and a water heater element the same moment you’re pulling a shot.

A battery power station solves the same equation with no engine noise or exhaust, which matters at an indoor market or a lobby where a gas generator isn’t allowed at all; EcoFlow’s own product page for its Delta Pro lists 3,600 watts continuous output and 3,600 watt-hours of base capacity, comfortable headroom for the same cart at a higher upfront cost. Propane is worth keeping in the mix for anything besides the machine itself: Snohomish County’s mobile unit rules allow hot-holding equipment to run on “propane, electricity or generators,” so a propane on-demand water heater for handwashing water takes real load off your electrical budget.

Water: what your county actually requires

Every mobile food unit needs fresh water and a way to hold waste water, but the gallon counts and the equipment required around them depend entirely on which category your setup falls into, and jurisdictions do not agree on the math.

Snohomish County, Washington spells out a distinct “Mobile Cart” category for an operation “that can be easily pushed by a single person to move between locations”: the fresh water tank must be 5 gallons or larger with no buckets allowed, and the wastewater tank must be 6 gallons or 15% larger than the fresh tank, whichever is bigger. That same document bans juice extractors and blenders outright on a true pushcart and requires reusable utensils to be washed and sanitized back at a commissary rather than on the cart.

Compare that to Kentucky’s plumbing code, cited in the North Central District Health Department’s mobile food service unit requirements: a permanently installed wastewater tank there must be at least 50% larger than the freshwater tank, a noticeably heavier standard, because that document is written for a fully self-contained mobile kitchen with a 3-compartment sink and full food prep, not a lightweight pushcart. Both jurisdictions also require an NSF International listed (or equivalent) fresh and wastewater tank, a standard that shows up in nearly every jurisdiction we checked.

The lesson isn’t a single gallon figure to memorize. It’s that your county decides which category you fall into (pushcart, unoccupied cart, occupied trailer) before it decides tank size, and that decision reshapes your equipment list, not just your paperwork.

Category-by-category compact gear

Espresso machine

Cart-King’s October 2025 equipment guide bands single-group cart machines into three tiers: budget at $1,500 to $3,500 (Rancilio Silvia Pro, Breville Dual Boiler, Profitec Pro 300), professional at $3,500 to $6,000 (Rocket Appartamento, ECM Classika PID, Profitec Ride), and premium at $6,000 to $8,000 (La Marzocco Linea Mini, Nuova Simonelli Appia, Rocket R9). Coffee Machine Depot’s separate breakdown quotes a wider $2,500 to $12,000 range for the same category, likely because dual-boiler premium models pull the top end higher. When two guides disagree by this much, treat the wider range as the honest one and get a current quote on your specific model.

A hand grinder draws zero watts, which matters more on a cart than almost anywhere else electricity gets tight. It’s also a real backup option if an electric grinder fails mid-shift and downtime isn’t an option.

If you’d rather run an electric grinder, Baratza’s Encore draws just 120 watts at 120 volts and 1 amp per the company’s own electrical spec sheet, a light enough load that it barely registers against the math above. Cart-King’s equipment guide bands electric grinders at $300 to $500 budget (Baratza Sette 270, Eureka Mignon Specialita), $500 to $850 professional (Mazzer Mini, Eureka Atom), and $800 to $1,200 premium (Mazzer Super Jolly, Compak E8, Mahlkonig Peak). The company’s separate startup-cost guide, published four days later, quotes a different band for the identical category: $300 to $600, $600 to $1,500, and $1,500 to $3,000. Even two guides from the same publisher don’t fully agree, so treat any single range as a starting point, not a quote.

Every row is a range, not a quote, and two of them come from guides that disagree with each other on the same publisher’s site within days. Treat the low end as a floor for a lean setup and the high end as realistic once you add a premium machine and a battery power station instead of a generator.

Power caps you at what a single 110V circuit or a portable generator can carry, not a commercial 208-240V line.
